There are a few places this happens. The best known is probably Robbie’s in the Keys. It also happens at the Sunset Lagoon café in San Pedro, Belize. I guess it also happens at Rum Runners in St. Croix in the USVI.
The USVI is not a bonefish destination, although they are there in limited numbers. If you find yourself out there, think tarpon instead.

I’d politely disagree with the above statement that there is not Bonefishing on St. Croix. In fact, St. Croix is not only one of the Top Caribbean Bonefish Destinations in 2024, but Ted Williams named it the Best Bonefishing in the WORLD in the 50s/60s. The Bonefish on St. Croix are so large that the Local Name for them is the TEN POUNDER! Catching a Bonefish over 5lbs here is the Norm, not the Exception!
